Hi, I have purchased a HDMI to CAT6 converter. It has One HDMI input and 2x CAT6 ouputs. Will I most likely need to use both CAT6 cables for a video or is one video and one sound?

You will need both cables. The sound is only 1 or two pairs.

No. it's not for sound. The sound is being send on the TMDS line of HDMI, which takes one CAT6 cable. Then the other is for Hot plug Detect, 5V. DDC. The unused pin can be left for the manufacturer to play with. To have it work you do need 2 cables
