Tonight I am grilling a rack of lamb that is resting with Kosher salt for a few hours prior to grilling. I'll make some garlic and black pepper couscous and a mixed greens sald with walnuts and goat cheese to go with it. Wine will likely be a Cabernet, not sure which, we went wine shopping the other day and it depends on the spirit which we choose (literally) all to be followed up by some 20 year old Linkwood Scotch.....
